Burger Night!

I know this is probably uncommon for someone on a Paleo/SCD diet, but I never make burgers. Somehow it just always seems like too much effort. The other day, I ended up buying some ground beef at the farmer’s market, so today it just seemed fitting to make burgers. This was quite a success, if I do say so myself! :)

Burger Dinner

For the Fixin’s

(Serves 1)

1/2 yellow squash

1 tbs coconut oil

1/3 yellow onion

1 tbs beef tallow or oil of choice

1 tbs balsamic vinegar

1 tbs beef stock

2 leaves chard

1 garlic clove

1/2 peach

salt and pepper

Preheat oven to 375 F. Melt coconut oil in a glass bowl in the preheating oven. Once melted, remove from oven and add salt and pepper. Slice squash and add to bowl, coating the squash. Layer the squash evenly on a parchment-lined baking sheet and put in the oven. Roast for 10 minutes per side, then add 5-10 additional minutes depending on the size/thickness of your slices. Peek on the squash occasionally. You may need to flip a few times in these last minutes.

Heat 1 tbs tallow or oil in a pan on medium. Slice the onion into rings and add them to the hot pan. Saute for a few minutes, then add the vinegar and stock. Cover for 10 minutes. After 10 minutes remove the cover and allow the liquid to reduce. Once reduced lower the heat and cover again for 5-10 minutes, depending on the timing of everything else you’re cooking!

Remove onions from the pan and set aside. Chop or rip the chard into pieces, then add it to the pan. If there wasn’t enough tallow left, add this first. Saute until almost done, then add chopped garlic. ┬áSaute for about a minute, then set aside.

For the Burgers:

(Note: The recipe makes 4 servings of burgers. Adjust accordingly.)

1 lb ground beef

1/2 tsp rosemary

1/2 tsp sage

1/2 tsp oregano

1/2 tsp parsley

1/2 tsp black pepper

1/2 tsp garlic powder

salt to taste

1 tbs beef tallow or oil of choice

Mix the ingredients and form into 4 patties.

Heat tallow on medium-high (I used the same pan. I really hate dishes). When hot, add patties to the pan (you may need to do this in batches depending on the size of your pan). Cook partly covered for 5 minutes per side.

Serve all together with sliced peach.
